Can a great chef's cookbook feel loose, almost laid-back? It can if its author is Jonathan Waxman, a "founding chef" at Alice Water's Chez Panisse and proprietor of Jams and Barbuto in Manhattan. His A Great American Cook--a collection of 100-plus recipes for the likes of Sea Scallop Fettuccine, Pork Shoulder with Mole Sauce, and Curried Catfish with Apple-Corn Fritters--shows a master in top form, blending global cooking traditions to produce uniquely American food, homey yet refined. His dishes are accessible to all cooks willing to cull the necessary (sometimes pricey) ingredients and spend a bit of time in the kitchen.Following an idiosyncratic take on ingredients and techniques (on bacon: "OK--I love bacon--and yeah, I'm from a Jewish household") the book explores, in addition to the usual course stops, sandwiches like Shrimp BLT and pizzas, as well as desserts, including Angel Food Cake with Toffee Crunch and Flourless Chocolate Espresso Tart. Of top interest are Waxman's grilling how-to's and other technical insights (for example, to dress a salad properly, add the vinegar first). Seafood, and salmon in particular, receives expert attention. Here is one man's soul cooking of a high yet relaxed order that readers will happily embrace. --Arthur Boehm

From Publishers Weekly

Waxman, hailed as one of the founders of New American cuisine, brought California cookery to the East Coast. After stints in Paris and at Chez Panisse in Berkeley, Calif., Waxman went on to found several prominent restaurants, including Manhattan's Jams and Sonoma's West Country Grill. In this handsome cookbook, his first, he offers recipes ranging from simple to complex, a tantalizing mix of rustic, ethnic and regional cooking that includes Wild Mushroom and Leek Soup, Pulled Beef and BBQ Sauce Sandwich, and Pork Tenderloin with Portobello Mushroom Sauce. Recipes are relatively short and easy to prepare, and instructions are clear and concise. Some dishes, such as Perfect Roast Chicken with Mashed Potatoes and Spinach, are pleasantly familiar, while others, like Pheasant with Oyster Stuffing, are somewhat beyond the standard fare but still appealing. Waxman also includes a chapter on sandwiches and pizza. Bobby Flay, a Waxman disciple, provides a foreword. More than 50 color photos not seen by PWAuthor tour. (Sept.)

More From Magnolia: Recipes from the World Famous Bakery and Allysa Torey's Home Kitchen

Image Hosted by !!!###$$$ 1h3R3 1m@g3H0st $$$###!!!
Located in Manhattan's Greenwich Village, the near-shoebox-size Magnolia Bakery has become a destination for lovers of all-things sweet. The reason? From the beginning its owner Allysa Torey and her staff have offered cakes (and particularly cupcakes), pies, and other pastries that are utterly unpretentious but deeply satisfying in a grandmother-would-have-made-it-if-she-could-have way. More from Magnolia Torey's second book, adds to her already impressive recipe roster 75 formulas that range from Pear Streusel Breakfast Buns, and Pumpkin Walnut Cookies with Brown Butter Frosting, to Chocolate Pecan Pudding Pie, and Old-Fashioned Chocolate Chip Ice Cream. Included also are recipes for signature specialties like Magnolia's Chocolate Cupcakes and famous banana pudding, plus a section on frostings and sauces. All are easy to do, even for beginning bakers, and all have the straightforward Magnolia appeal. --Arthur Boehm

Baking Illustrated: The Practical Kitchen Companion for the Home Baker: The Ultimate Resource for the Modern Baker With More Than 350 Recipes (Best Recipe)

Image Hosted by !!!###$$$ 1h3R3 1m@g3H0st $$$###!!!
The mysteries of cream of tartar revealed! How to make maximum use of blackening bananas! The hidden meaning of folding in dry ingredients until just blended! Perfect pie crusts for perfect fools! It's all here in Baking Illustrated, from banana bread to pecan bars, and everything imaginable in between--500-plus pages of densely packed, illustration rich, photo finished information all devoted to baking. Tools, techniques, ingredients, tips, and perfect, tested recipes.
There's cooking and there's baking, and the two should never be confused. Good cooks are ever commendable. Good bakers, on the other hand, have something about them bigger than skill or imagination, something that reaches back to the beginning of agriculture and the first inklings of civilization. Good bakers are their own mystic society. So hats off to Cook's Illustrated for throwing open the doors and sharing the mysteries with the rest of us. Baking Illustrated absolutely has it all. You'll find chapters devoted to "Quick Breads, Muffins, Biscuits, and Scones"; "Yeast Breads and Rolls"; "Pizza, Focaccia, and Flatbread"; "Pies and Tarts"; "Pastry"; "Crisps, Cobblers, and Other Fruit Desserts"; "Cakes"; and "Cookies, Brownies, and Bar Cookies". No mean undertaking, all that. Tools are tested and names are named. Techniques are stripped back then rebuilt. Cook's Illustrated carries all this off with a style and relish for inquiry and detail that sets a standard. Nothing is taken for granted because there's no fudge room with baking. It works or it doesn't. So trust is a big issue. And the end result of all the mighty labors of the Cook’s Illustrated staff is text you can trust. This is a baking book that works.
